Mr Osman and his team of 11 staff serve their guests freshly prepared 3-course menus focusing on healthy and delicious Mediterranean specialities – with a panoramic view of Cologne. Steffen Achtmann, chef at Osman30 for the past 18 months, describes the initial situation: „Our kitchen is on the ground floor. From here food is supplied to the restaurant on the 30th floor. Exhaust air was always a problem in the past. It is routed through an 8m long pipe into the underground car park under the building and from there it exits straight outside.
